Recipe: Quick & Easy Raspberry Ice Cream

After such a hot today here in Melbourne, I struggled to focus on my studies so I took a break and went to the shops in search of some healthy ice cream!  I haven’t had store bought ice cream in such a long time (I usually make my own), but I thought there must be at least one healthy ice cream there. Boy was I wrong! I was so surprised with how bad the ingredients in store-bought ice cream actually were! Many even contained high fructose syrup and soy bean oil! Even the ‘gourmet’ ice creams which I thought would be a bit more wholesome, were not excluded from containing those horrible ingredients! After giving up on finding not one brand of healthy ice cream, I grabbed a bag of frozen raspberries and went home to get creative.

The following recipe is what I came up with:

Quick & Easy Raspberry Ice Cream

Take a few handfuls of frozen raspberries, add a bit of milk  and blend till smooth in a food processor. Scoop out and enjoy!

Excellent on your quick ice cream! Glad you didn’t cave and buy the horrible stuff! There aren’t enough label readers out there to care what’s in it, they just want what tastes good!

Thanks Debbi! I’m really glad I didn’t have to cave into buying those ice creams as well, there is practically no goodness in any of them! So true, for some people if it tastes good they don’t want to know what’s in it! I like to think as healthy cooks we can use that for our advantage- if we give someone something tasty and they love it then that helps to get them to eat it, then that’s half the battle won!

Hi Michelle,
I just recently gave up ice cream maybe about 3 weeks ago. I never missed my nightly bowl of ice cream and needed some good home made ideas. I guess any frozen fruit blended even with soy milk or almond milk would work. I thank you for the great idea.

Hey Dave,
Yeah definitely! Mangoes are another great fruit that would work really well and almost any berry fruit too. Yes you could certainly use soy or almond or even coconut milk.

Wow the texture looks really good for it just being raspberries and milk. I never really thought about mixing the too in a food processor but it looks delicious – I actually have all the ingredients at home. I will give it a try for sure!
