Eggs, Bacon and Cauliflower Like Fries

I’m a believer in all things in moderation and that includes lovely magical bacon. Luckily I’ve found a brand of bacon that is organic and grass-fed, it’s appropriately called Pasture Perfect Pork.  The eggs I used are Biodynamic and were from Bullfrog Gully farms.

The Cauliflower Like Fries recipe is from Mariana Cotlear’s blog Epicuriosa– I was pleasantly surprised when I tried it. The way the cauliflower becomes crispy and in a way is slightly sweet and not to forget its major appeal is that it is really very delicious. Here I’ve made Mariana’s ‘Cauliflower Like Fries’ and added a piece of bacon and an egg on top (really yummy!).

Eggs, Bacon and Cauliflower Like Fries

Adapted from Mariana Cotlear’s Epicuriosa.
Ingredients:

  • Eggs
  • Bacon
  • Cauliflower
  • Olive Oil
  • Salt and Pepper

How to:

  1. Chop up your cauliflower in small pieces. Mix with olive oil, salt and pepper. Place in a baking dish and cook for 30-40 minutes until crispy.
  2. Cook the eggs and bacon however you like and serve with the cauliflower like fries.

Variations:

  • Make scrambled eggs and then mix in the caulilfower fries and bacon before serving.
  • Make a poached egg. Add sliced bacon to the baking cauliflower and cook until the bacon as well as the cauliflower becomes crispy.
  • Make an omelette and add stir in the bacon & fries.

I love roasted veg, but I’ve never thought to top them with an egg. Genius!!!!!

Oh my goodness…this sounds amazing! As if the crispy, delicious cauliflower were not enough… YUM!! I should really eat breakfast before I go around blog-hopping ;)

Roasted cauliflower is amazing. I am so glad I “discovered” it a few years ago. When cauli is in season, I just can’t eat enough of it.

I had to make this as soon as i read it!  It's wonderful!  I've never had cauliflower cooked like this and loved it. I cooked extra so for lunch i'm having the cauliflower with parmasan cheese on top.

I love roasted cauliflower! You should try roasted broccolli too. This dish looks fantastic… I'm going to try to find that great bacon.

You know the other day I was looking at some broccoli and I thought I wonder if I can roast you broccoli! I’m definitely going to try roasted broccoli now thanks!

Yeah it’s good bacon! Hopefully you’re in Australia (where I am) otherwise you might not be able to find it (it’s an Australian Farm).

Fabulous photos! I could definitely go for this meal! I've had cauliflower fried like popcorn shrimp before and it was so good. It really looked and tasted like popcorn shrimp.
