Recipe: Dark Chocolate and Banana Lava Cakes (gluten-free, dairy-free, egg-free)
Makes: 2 mini chocolate lava cakes.
Ingredients:
- 2 dessertspoons cacao powder
- 2 dessertspoons carob powder
- 1 tbsp. boiling water
- 1.5 heaped dessertspoon coconut oil
- stevia powder, to sweeten
- 1/2 tsp. vanilla extract
- 1 ripe banana, mashed well
- 2 squares of dark chocolate
How to:
- Preheat the oven to 150 degrees C.
- In a bowl mix the cacao and carob powder.
- Add the coconut oil, boiling water and enough stevia to sweeten to your liking. Stir this mixture to dissolve the coconut oil, stevia, cacao and carob powders.
- Stir in the vanilla extract and mashed banana.
- Spoon this mixture into two small silicon muffin cups. Place one square of dark chocolate in the middle of the mixture in each cup.
- Bake at 150 degrees C for about 12 minutes or until the outer parts of the cake is cooked and the middle part is slightly soft.
- Leave to cool to room temperature.
- Enjoy!

Thank you for a wonderful blog and an recipe for lava cake. Without even mentioning it, your picture gave me a good idea. I think when I make this this weekend I’m going to add the oranges on the side. I believe the citrus taste will counter the strong and poignant taste of the lava, plus giving me a fruit to eat with it won’t make e feel too bad. ;P
mmm. this looks so good! and it has no nut flours or coconut flour! can’t wait to try it. i wonder if i can use all cocao powder and no carob..?
Hi Joy. Oh thanks! You can definitely use all cacao powder! I like to use half and half cacao and carob because I find too much cacao can give me a headache.
Thanks Michelle – great looking recipe! Cant wait to try it. Can I substitute coconut oil with another oil? Coconut oil for cooking is quite hard to get here in New Zealand. Also, can I use plain cocoa powder or is cacao different?
My last question relates to a suggestion you made elsewhere about avocado ice-cream…do you have a recipe for that please?
Hi Rosita! Thanks! Hmm, well you could use butter or ghee instead of coconut oil (if you don’t follow a vegetarian or vegan diet) or you can use macadamia butter!

Would I have to modify the temperature or bake time if I were to make 12 of these? (to keep the molten center)
Hi Kris,
The bake time should be the same. If you’re worried, you could lower the temp a bit and see how they are after that time. Then cook for a bit longer if need be.
