Here is another delicious recipe that I adapted, this recipe originally coming from Jamie Oliver. I chose to use sardines rather than herring as it is one of the more ecological choices of fish in Australia (and when cooked this way it tastes great!).
Recipe: Mediterranean Style Sardine and Potato Noodles
Adapted from Jamie Oliver’s Mediterranean Style Herring Linguine
Allergen info/recipe info: This recipe is gluten-free, wheat-free and dairy-free.
Serves: 3-4
Ingredients:
- 3-4 zucchinis (or carrots, sweet potatoes, parsnip etc to make veggie pasta)
- extra virgin olive oil
- 2 cloves of garlic, peeled and finely sliced
- 1 fresh red chilli, finely sliced
- a small bunch of fresh flat-leaf parsley, leaves picked and finely chopped, stalks finely sliced
- 3-4 x can of sardines
- a small handful of vine cherry tomatoes, quartered
- 1 lemon
- a knob of butter (optional)
- sea salt and freshly ground black pepper
How to:
- Wash the zucchinis (or other veggie of your choice) and then make them into veggie noodles (like in this, this and this recipe) and set the aside.
- Meanwhile, boil water with sea salt and when it’s boiling add the zucchini and cook till soft.
- While the zucchini pasta is boiling, in a hot pan cook the sliced garlic, sliced chilli and sliced parsley stalks with a bit of olive oil for a few minutes.
- Pour the oil out of the can of sardines, then add the sardines to the pan with the garlic etc and cook till heated through. Now add the quartered cherry tomatoes and a squeeze of lemon juice.
- Strain the cooked zucchini “pasta” and stir it through the ingredients in the pan. Stir the pasta into the ingredients in the pan, add the butter if using, fresh parsley leaves and season with salt and pepper. Serve and enjoy!
