Wild Edible Weed Dandelion Salad

After going to a wild edible weed walk and lecture by Sergei Boutenko, I decided I’d try out a few recipes using wild edible weeds. This a salad I made with dandelion leaves from my backyard. Go “wild” (sorry couldn’t resist) & have fun!

Wild Edible Weed Dandelion Salad

Ingredients:

  • a handful of dandelion leaves, washed and pat dry
  • 1/2 avocado, chopped
  • 1/4 red onion, sliced thinly
  • 1/4 parsnip, sliced thinly in strands
  • 1/4 carrot, sliced thinly in strands
  • 1/4 chili, sliced thinly (optional)
  • to serve: olive oil and lemon juice

How to:

In a bowl mix together your dandelion leaves, avocado, red onion, parsnip, carrot, chili, pour over your olive oil and lemon juice. Enjoy!

Looks lovely and super easy to put together. I’ve never had edible weeds before, how do they taste?

Thanks Steph! Well different edible weeds will have different properties and so different tastes. Dandelion leaves are really pretty bitter (though the bitterness is meant to increase bile production and flow). In a way I like the bitterness, they kind of have a similar taste to that of rocket. You can also eat the roots (after roasting) and you can add the flowers to salads + whatever you like really.

The salad looks beautiful but I bet it sure is bitter. I might add some sweet lettuce to it. I’ve done this too though – foraged in my yard for edible weeds. It’s so much fun!

A friend of mine has pointed out a weed that she described as wild kale and said that she ate it often growing up, so between her advice and ideas like yours, I’m intrigued (and learning)!

Oh wow Wild Kale- sounds pretty interesting! I find it so amazing how may plants called “weeds” are actually edible and just called weeds cause of their growing power! Thanks for hosting Food on Fridays!

What other edible leaves are common the back garden; i can see dandelion in abundance but am not sure about the others!
