Lavendar Cordial, Sweet Syrup and Ice Tea

I bought a 50g of organic lavendar flowers so I thought making a cordial would be a lovely way to have it! I also made a Sweet Lavendar Syrup (inspired by Ani Phyo’s lavendar syrup) and a beautiful fizzy purple ice tea (tisane)!

Lavendar Cordial

You will need:

  • 25 g of organic lavendar flowers
  • 500 ml of filtered water
  • 100 ml of organic real maple syrup (for a darker coloured cordial) or a light coloured honey/rice syrup (for a bright cordial)
  • 1 lemon, juiced
  • 2 cloves

In a saucepan add the water, lavendar, maple syrup, lemon juice and cloves. Simmer this on very low heat, while stirring, for about 30 minutes or so or until it becomes syrupy and it tastes like lavender, and becomes a purple-y colour. When it is ready, strain the syrup to remove the flowers. This can be stored in a glass lidded jar in the fridge.

Sweet Lavendar Syrup

You will need:

  • 2:1 of Lavendar flowers and maple syrup (or a clear honey fora a brighter purple syrup).
  • a bit of water to thin out the syrup.
  • 1 tsp. vanilla extract

In a mortar and pestle grind the lavendar till fine. Add the syrup and grind together until smooth. Simmer this and the vanilla extract in a saucepan until it becomes a syrupy texture and it smells and tastes like lavendar. Cool and store in a container in the fridge. You could freeze some of the syrup in ice cube trays and use in  the Lavendar Iced Tea (below). This syrup is delicious as a sauce on top of plain vanilla ice cream!

Lavendar Iced Tea (Tisane)

You will need:

  • 2 tbs. of lavendar flowers, per jug
  • 4 cups of water
  • honey/maple syrup/rice syrup, to taste
  • ice cubes

Put lavendar flowers into a tea ball and place in the jug of water. Stir in the sweetener till dissolved. Leave the lavendar to infuse in the jug for about

Notes: You could use soda water instead of plain water to make it fizzy.
