This uses honey, vanilla extract and various grains and seeds to create a yummy, crunchy and nutritious breakfast!
Honey Toasted Ancient Grain Granola
Ingredients:
- 1Â C. of raw honey, melted
- 1 C. of raw rolled oats
- 1/2 C. of quinoa flakes
- 1/2Â C. of cashews, unsalted
- 1/2 C. almonds
- 1/2 C. walnuts, broken in half
- 1/2 C. pepitas
- 1/2Â C. puffed millet
- 1/2 C. puffed kamut
- 1 tsp. vanilla extract
- 1 tsp. cinnamon, ground
How to make it:
- Melt the honey. Add the vanilla extract and cinnamon to the melted honey.
- Add all the grains seeds and seeds and mix to coat.
- Spread out this mix in a baking tray and cook for about 40-45 minutes until the granola becomes dry and light brown.
Variations/ Ways to serve it:
- Serve as cereal with rice or almond milk.
- Soak with milk overnight as you would bircher muesli.
- Serve with a dollop of organic yoghurt.
- Serve with frozen berries and milk.
- Try making different varieties by adding goji berries, sultanas, raisins, dates, prunes, cranberries to the mix.
- Serve with fresh fruit such as sliced banana, strawberries, or grated apple.
