Prosciutto Bacon, Steamed Romanseco and Avocado Salad with Mustard Vinaigrette

I found this interesting alien-esk vegetable at the farmers market on Sunday from Peninsula Fresh Organics. This amazing green vegetable is actually called Romanesco Broccoli (it’s botanical name is broccolo romanesco), it’s related to cauliflower and it was supposedly documented in Italy as far back as the 16th century.

This salad turned out really well and was a great way to eat my first Romanesco! I also made sure each Romanesco floret kept its shape (by cutting near the ‘stem’ of the Romanesco too), It’s too beautiful to not I say.

Prosciutto Bacon, Steamed Romanseco and Avocado Salad with Mustard Vinaigrette

 

Makes: 1 Serve

 

Mustard Vinaigrette Ingredients:

(basic vinaigrette recipe based on The Concise Larousse Gastronomique)

  • 1 T. apple cider vinegar
  • ¼ t. celtic sea salt
  • 3 T. extra virgin olive oil
  • 1 t. mustard
  • black pepper

To make the vinaigrette: dissolve the salt in the vinegar by whisking with a fork or whisk. Beat in the oil, mustard and pepper till it becomes emulsified.

Salad Ingredients:

  • ½ avocado, sliced and cubed
  • a few tablespoons of flat leaf parsley, washed
  • ¼ red onion, sliced
  • ¼ romaesco florets or cauliflower steamed
  • 2 pieces of proscuitto or bacon, torn into small pieces
  • 1 t. olive oil
  • 2-3 T. mustard vinaigrette

Prepare the avocado, parlsey and onion (as above) and put them in a bowl. Cut pieces off the romanesco (around a third of the romanesco) and then lightly steam them till soft. While they are steaming, cook the proscuitto with the olive oil in a pan till crispy. Add the romanesco and proscuitto to the bowl then toss the salad. Add the dressing to taste.

Isn’t it the coolest looking vegetable? I first had it a few years ago from our local CSA! So many vegetables, so little time!

This is SO COOL! I love how it looks and I guess its particularly do to the Romanesco broccoli, which I’d never seen or heard or before. Very alien-esque indeed!!! I can’t get over the colors either, its such a pretty salad. I might have to give the vinaigrette dressing a go :)

Hmmm…Would it taste like broccoli or cauliflower? Judging from its appearance it looks more like a prettier version of a cauliflower to me than a broccoli. But the salad recipe is quite simple and I reckon pretty good. The only problem now is, “Can I find this romanseco veggie at the local grocery?”

Well it tastes more like cauliflower..but much nicer than (to me anyway) and it’s meant to be a bit sweeter too. Hmm you may be able to find it at the local grocery store…it all depends on what they stock! Good luck on your Romanesco hunt and thanks for stopping by!

I really love avocado and for me it taste yummy. Looks different but I cant resist to try that one and serve it to my family. I know they will flip over it:)

I love the look of this vegetable, so interesting. I have never seen it for sale in my area, and I have been watching. I wondered what it tasted like. Great post. I’ll have to look for it a little harder.

This looks fabulous! I have never tried Romanesco Broccoli but I LOVE broccoli reg. style. I will have to be on the lookout for this type of broccoli soon :)
