I've been drizzling my Elderberry Syrup on dessert items like White Peach Cobbler, Chocolate Mousse and sliced nectarines (to make them into dessert). Also a spoonful in smoothies, as elderberries are so high in antioxidants. I may have to forage for more and make your jam :)

Thanks Lynn. Well no I actually kept the whole elderberries in the jam. Seemed to work pretty well. That elderberry syrup sounds nice. I haven't finished the jam off in a hot water bath...however I did pour this jam into a hot sterilized jar which seemed to keep the jam fresh. I'd love to know what you do with your elderberry syrup!

Interesting recipe. I've used agar agar before but never making jam. Did you strain off your elderberries to get rid of the skin and seeds? I've got a batch of elderberry syrup on the stove as I speak wondering what to do with some of it. Have you ever finished off this jam in a hot water bath for longer storage?
